Behind the Catering Curtain: A to Z (Part 3)

Any catering team worthy of the name can use an existing kitchen. The expertise comes through the team making the kitchen its own, as if they cook there every day. And a truly great one makes one appear where none exists, cook like pros, and make it disappear without a trace when the event is done.


Table and service linen means anything from tablecloths, table runners, dinner napkins, and so on. Linen-related tasks during set-up include how each and every napkin is folded and positioned at each table setting. During break-down the team makes sure every piece of linen goes into the special canvas bags for return.


What happens when all these components–and many more–are given full, professional attention by the catering team. From moving umbrellas to keep the sun out of guests’ eyes, to anticipating the newlyweds’ and wedding party’s thirst and hunger during the photography session. Believe it, and believe in it.


Weddings typically end well after dark, so the catering team may bring additional, generator- or battery-powered lighting to make sure that its work can be performed safely, even in the wee hours of the night. Team members might even go so far as to wear a small, LED-powered spotlight on an elastic band so they can see clearly and safely in the darkness.


A rented venue will typically include a specific time for all guests and other persons to be off-premises in the rental contract. The time may not be negotiable, as the venue may be obligated to follow local and municipal ordinances for event components like music and alcohol service.


Short for cooking or food preparation, this term includes all the steps that involve food that are accomplished ahead of time, from peeling the first potato to cutting the last lemon twist for bar service. It includes food prep done in the catering service’s own kitchen, as well as any done on-site.
